Long Past Due #2: The last January recipe

So, tired of bottled salad dressing, I decided to try this basic dressing from Simple Vegetarian Pleasures. This was a nice, simple, change from the typical balsamic vinaigrette. Keep reading below for my overall impressions of this cookbook.

Weekly Batch of Salad Dressing

3 tablespoons lemon juice
2 tablespoons red wine vinegar
2 garlic cloves, put through a press
2 tablespoons tamari soy sauce
1/4 teaspoon salt
Generous seasoning freshly ground black pepper
1 cup olive oil (I used less, to intensify the flavor of the other ingredients)

1. Combine all the ingredients in a jar with a tight-fitting lid and shake vigorously. Store in the refrigerator, but remove it at least 30 minutes so the olive oil will melt at room temperature. (I find it takes longer, but maybe my house is just cold)

Despite the lack of pictures in this cookbook, Simple Vegetarian Pleasures is definately a winner. Everytime I open up this book, I see a new recipe that I want to try--and the majority of the dishes turn out to be as delicious as they sound! So go get your own copy! Or borrow mine... :)
